St. Patty’s Day is on the Way!

I’m not Irish, but I do enjoy any holiday that encourages excessive drinking! Its taken me a few years but I have finally settled on a version of a St. Patrick’s Day meal that I look forward to every year!

The Menu

Corned Beef
Cabbage with Carrots
Double Stuffed Herb Potatoes

Corned Beef

1 3 lb. corned beef brisket, in brine
16 cups cold water
2 bay leave
6 all spice berries
3 whole cloves
A Large Dutch Oven

Preheat oven to 300 degrees F. Rinse Corned Beef. Place Beef in dutch oven, add all ingredients and Bring to a boil on the stove top. Skim off any scum that rises to the surface. Cover and transfer to the oven for 3 hrs and 45 minutes. It should be fork tender. Place it on a cutting board and cover with foil to let it rest . Slice it ACROSS THE GRAIN into 1/4 inch slices. (If you do not cut this meat across the grain, its too chewy. Slice a piece and if you can break it apart easily, you are on the right track.)

*note corned beef shrinks considerably. You can figure on about a pound a person when buying it.

Cabbage & Carrots

I medium Onion
3 tablespoons butter
4 medium carrots, sliced super thin (use a mandolin if you have one)
6-8 cups chopped cabbage
1/2 cup chicken broth
1 teaspoon salt
1 teaspoon sugar
a few grinds of black pepper to taste.

Saute onion in butter on med heat until onions are tender. Add the carrots and sauté for 2-3 minutes. Stir in the remaining ingredients and bring to a boil.

Reduce heat, cover and simmer for 5-7 minutes or until vegetables are tender. Check for seasoning.

Double Stuffed Potatoes

Bake one potato per person, plus a few extras for mashing. When cool enough to handle, gently scoop out the insides of the potatoes you will serve, leaving a firm shell. Using the insides and extra potatoes, mash them using your favorite method and recipe. I like to use sour cream, milk, butter, and parsley. Fill a ziplock bag with the potatoes and snip off a corner. Pipe the potatoes into the shells and bake for about 25 minutes at 350 degrees or until hot. (If you are preparing them ahead of time and they are cold from the fridge, they will need about 45 minutes to heat throughly)
