Pasta Dough

Homemade Pasta is one of life's simple pleasures. It's silky texture melts in your mouth and leaves you wanting more and more!

Equipment

  • Food processor

Ingredients

  • 225 grams Double 00 Flour
  • 75 grams Semolina Flour
  • 3 large eggs (organic, farm fresh recommended)
  • 1-2 large egg yolks. (Start with one. If too dry, add second)

Instructions

  • Measure out all ingredients.
  • Add Double 00 Flour and Semolina Flour to the bowl of a large food processor fitted with a steel blade. Pulse 2-3 times to combine.
  • Use the back of a spoon to make a crevice and fill the crevice with one egg. Pulse 7-10 times. Repeat until the dough begins to form.
  • Once a dough ball has begun to take shape, dump the dough onto a clean surface, such a butcher's block, and kneed the dough for 1-2 minutes until the dough bounces back when gently pressed with your thumb.
  • Wrap in plastic wrap and then a dish towel and set aside for 30 minutes and then begin to roll and shape. Or, wrap in plastic wrap and then a dish towel and refrigerate for ups to 24 hours.
