Bill Alles, the proprietor of the renowned Churchill’s Steakhouse, comes from a long line of butchers. His grandfather was a master butcher who immigrated from Germany to the US in the late 1800s and settled in Philadelphia. As a child, Bill learned old-world techniques from his father and grandfather, spending countless hours working to perfect his craft.
Today, Bill incorporates many of the techniques passed down to him from previous generations, continuing the Alles family tradition and passion for top-quality beef sourced from only the top 2% of beef cattle in the country. The same perfectly trimmed, beautifully aged USDA Prime steaks served at the famous steakhouse are now available to be expertly shipped around the country.
