Sheet Pan with Wire Rack

A half sheet pan with wire rack insert has multiple uses including keeping air circulating and protein from overcooking on the side that has direct contact with the pan. It also allows foods like chicken wings to crisp all the way around, rather than just on top because the air can move under and over, rather than just on one exposed side. It also helps keep food crispy when coming out of the fryer- this is especially helpful with things like fried chicken cutlets, fried shrimp and tempura vegetables. These are just a few of many ways I find myself using this simple, yet effective tool. Many of my recipes make mention of it and I do believe every kitchen should have one.

I use the wire rack for any number of things including, but not limited to:

  • All Steaks, Pork Chops, Chicken or anything I am reverse searing
  • Even roasting of Beef Tenderloin & Pork Tenderloin roasts
  • Dehydrating zucchini and eggplant for chips
  • Setting fried foods like chicken and calamari after they come out of the fryer
