Sautéed Cabbage & Carrots

Ingredients
  • I medium Onion
  • 3 tablespoons butter
  • 4 medium carrots sliced super thin (use a mandolin if you have one)
  • 6-8 cups chopped cabbage
  • 1/2 cup chicken broth
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • a few grinds of black pepper to taste.
Instructions
  1. Saute onion in butter on med heat until onions are tender. Add the carrots and sauté for 2-3 minutes. Stir in the remaining ingredients and bring to a boil.
  2. Reduce heat, cover and simmer for 5-7 minutes or until vegetables are tender. Check for seasoning.
