Sautéed Cabbage & Carrots
- I medium Onion
- 3 tablespoons butter
- 4 medium carrots sliced super thin (use a mandolin if you have one)
- 6-8 cups chopped cabbage
- 1/2 cup chicken broth
- 1 teaspoon salt
- 1 teaspoon sugar
- a few grinds of black pepper to taste.
- Saute onion in butter on med heat until onions are tender. Add the carrots and sauté for 2-3 minutes. Stir in the remaining ingredients and bring to a boil.
- Reduce heat, cover and simmer for 5-7 minutes or until vegetables are tender. Check for seasoning.
