This 2 ingredient Prosciutto wrapped asparagus is nothing more than bite size spears of blanched asparagus that are wrapped with paper thin prosciutto. It’s elegant and a crowd pleaser!

Every host is always looking for elegant bite size appetizers, or finger foods, that can be served cold or at room temperature. Trust me, there aren’t too many out there that are easy to master, but this is one of them.

There is a very small down side to making theses, and anyone who often makes bite size finger foods probably knows exactly what I am going to say! Bite size = time.

While these bites of delicious asparagus are simple, you do need to set aside the appropriate amount of time to blanch, slice, dry, and roll. Again, simple (very simple) steps, but appropriate time is required, none the less.

However, they can be made a few hours ahead of time, and they travel well. These mini Asparagus Prosciutto bundles make for a nice hors d’oeuvre to being to a friends house, or to serve to your own guests.

How to buy Asparagus

Look for asparagus stalks that are firm, able to stand up straight, and with a smooth texture. Avoid stalks that appear limp or wilted. The tips of asparagus should be closed and compact, free from spreading , softness or appear mushy. Asparagus are considered a spring vegetable in the northeast, but readily found year round in most food stores.

Roasted Asparagus
Asparagus is the most quintessential of all spring vegetables and preparing it couldn’t be easier. Simply toss with olive oil, salt & pepper and bake for 12-15 minutes until tender.

Step 1

Steam whole Asparagus stalks until bright green but still crunchy. About 2 minutes, but timing depends on the thickness of your asparagus. Blanch the steamed asparagus in ice cold water to stop the cooking and preserve the beautiful green color. Dry thoroughly. Then slice off the stalks to about 3 inch pieces and slice in half.

Step 2

Slice the tips in half and lay flat side down on paper towel to absorb excess moisture. For thick pieces, slice again.

Step 3

Cute the middle stem into half and then in half again. Dry as well as possible on paper towel.

Cut appropriately sized pieces of prosciutto and lay flat. Bundle 2 half of asparagus tips and 2 pieces of the thinly sliced stems pieces and roll tightly.

Pro Tip!

Prosciutto wrapped Asparagus bundles can be made a few hours in advance but the asparagus needs to be dry! If the asparagus is too wet, the prosciutto will be soggy and not enjoyable.
