The perfect meal for a special occassion


I like to call this special occasion menu The Casa De Collins menu because, well, our last name is Collins, and we serve it in our house. Nah- just kidding- that’s too obvious. It’s actually because I feel this meal represents us really well and we truly enjoy sharing it with others.

Like us, it’s a little bit rustic, it’s simple, a bit extravagant, and full of love. For us, it’s Brett and Chrissy on a table, and that is what Feast and Merriment is all about.

This menu is perfect for a special occasion of any kind. My only recommendation is to not wait as long as I did for a special occasion to come along before trying these special dishes.  So, learn from my mistakes and don’t wait for a special occasion- create one and make some memories! Often overlooked by home cooks because they can be intimidating, sauce is vital and what pulls a meal together. Like shoes to an outfit- it serves an important functional role as well as pulling everything together. Sauce should never, ever be overlooked.
